Our cross of Border Leicester and Blue Faced Leicester sheep provide gourmet quality delicious, lean, mild flavored meat with no gamey taste or odor to cook. We have found this to be true even with older sheep which would normally be considered mutton. The taste at two years has remained mild and tasty. Lambs are offered in the fall having been born in March or April. Average weight is between 100 and 150 pounds. Live animals can be purchased for home or locally found harvesting or we can have this done for you at a nearby butcher. Once a lamb is harvested roughly half the weight remains which is called the hanging weight. The hanging weight is what you are charged for per pound plus the charge from the butcher for cut and wrap. The organs have been removed as well as the hide and head. The lamb is then hung for several days before being cut and wrapped. About ten percent dehydration occurs during hanging. The meat is then cut and wrapped by the butcher. Call for availability and pricing which is dependent upon the cost of both the harvester and the butcher. All our sheep are raised on 40 acres of fenced pasture allowing them to eat grass. No spraying is done and they are additionally provided Redmond mineral loose salt and Atlantic kelp providing yet more nutrition. All sheep are locked up at night avoiding any possible predators. Our Sheep are given a calm, healthy and nurturing environment and provided with clean U/V filtered water. No growth hormones, antibiotics or sulfa drugs are ever used. Though we are not organically certified we follow these guidelines and go beyond regulations which can have certain loopholes.
